At Citarella, we’re always on board with the “eat local” movement. And in that regard we’re so fortunate to call New York home. Because mere miles from our millions-strong city, we have access to some of the most fantastic flatfish the world has to offer. And flounder can be found on that list. This wild white fish is line-caught in the rich Atlantic. It’s flaky and mild with a delicate, creamy meat . Lightly pan-fried with a side of just picked farm fresh vegetables, it’s a consummate taste of the bounty right in our (saltwater) backyard. Skin is removed from our flounder fillets.
